Blend yogurt or kefir with coconut cream, coconut oil, flour, water and sea salt. Beat in Rapadura, vanilla, spices, baking soda, raisins and nuts. Oil and flour 2 loaf pans. Divide the batter between the 2 pans and bake at 300 degrees for about 1 hour. Loosen the layers quickly but let cool before removing from the pans. Soak each cake with 1/2 cup of rum (optional). |
Rib Roast with Onion Cranberry Compote Rib Roast:
Set the roast in a baking pan on a rack and rub with salt and pepper. Insert the meat thermometer in the centre of the roast. Place in a 400 degree oven. Reduce heat to 350 degrees and bake for 15-20 minutes per pound or until thermometer indicates meat is rare to medium rare. Onion Cranberry Compote:
Soak raisins in water for 10 minutes. Meanwhile, in a large saucepan, saute onions in coconut oil until well coated. Add brown rice vinegar and boil down for several minutes. Add raisins with the soaking liquid and remaining ingredients except cranberries. Liquid should just cover the onions. If not, ad a little water. Simmer, covered for about 1 hour, stir occasionally. Remove cover, add cranberries and simmer uncovered for 15-30 minutes until liquid has thickened. Let cool. Serve with roast at room temperature. |
